offhand proc, he was duel wielded.. which seems to do stealth attacks a lot better than 2 handers, which in a way make sense.. you can't exactly stab someone in the back with a giant 2-hander in a stealth like fashion.
try it in real life, thats why assassins prefered daggers or short swords in medieval etc times, and the one thing you never got in assassins creed was a giant 2 handed weapon in order to stealth attack people.
