The answer to that is simple: as much as possible!
If you want to know what stats are realistic, I can give you mine, though they probably are above average:
Damage Equip:
Crit 17,8%, Crit Dmg 28,6%, Hate -7,6%, Hit 12,0%
Magic Health Tap 1,5%, Magic Mana Tap 0,9%, Natural Mana reg 167
Base Spell Damage 8,5%, Bonus Spell Damage 1270
Hate/Raid Equip:
Crit 16,1%, Crit Dmg 30,1%, Hate -11,0%, Hit 12,7%
Magic Health Tap 1,5%, Magic Mana Tap 0,0%, Natural Mana reg 152
Base Spell Damage 8,5%, Bonus Spell Damage 1188
That's with a mix of Kithai (Scarlet Circle) and T3 items with 5/5 Pressing and Decisive Strikes, 5/5 Will of the Sublime, Supereme Lich and a Reanimation/Nightfall hybrid feat setup.
I don't know of any caps, but hit will become useless after a certain value. I cannot say how much that value is, however

Lol m8, my stats are laughable compared to yours... I really have to work hard here  Well, I like when there's plenty of space for improvement, makes me feel "younger"

One doesn't really need equipment like that. I draw aggro constantly, even without spellweaving and full -aggro equipment. If you're starting at raiding, get a full set of basic crafted cloth (looks boring and is suspiciously cheap, but is actually quite impressive damage-wise) and 2x Dreamer's Keepsake (level 80 craft ring). Fill up all gem slots with magic damage.
Work your way up until PvE T1, then you're done basically. T2 and T3 are minor improvements. Some Kithai pieces, however, are pretty great (e. g. amulet from Tamarin's Tigers, cloak from the Last Legion).

my stats with raid-hate equip:
Magic Damage (cold/unholy) 1118
Crit. rating 14.2
Crit. Damage rating 32.8
Mana 9228
Nat.Mana Regen 164
Health 7498
Armor 15.2
Hate decrease -15.8
equip is a mix of t3 and sc, have only 2/5 in decisive strikes, thats why im missin a bit of crit-rating....
im also not usin the supreme lich, i use 5/5 in decays and 5/5 in chilling breath
